Mini Apple Pies

Monday night we hunkered down, anticipating the arrival of  Frankenstorm a.k.a hurricane “Sandy” here in Upstate NY. School was already canceled for the next day. How great knowing we’ll have a day off ahead of time!

 I was totally pumped about the impending windy weather. I love a good storm. Rain, snow, wind…bring it on! I realize that sounds a bit crazy, but living in Upstate NY,  generally we only contend with snow. So when the local weatherman said indeed this will be a big rain and wind event, I was a tad excited. With that being said, I’m grateful we didn’t have devastation like what occurred in NYC and other East coast areas. Our thoughts go out to everyone who is dealing with loss.

So when we awoke to power and sunshine and what seemed like an unwarranted day off, my girls initially asked if we could head to the mall. “Are you kidding?? We’re suppose to stay home! Remember, we had a storm here girls-sarcasm.”

 Now that we determined we were staying home, baking something tasty sounded like a good way to start the day. Being, ahem “house bound” we had to use ingredients we had on hand. Taking a look through the fridge we came up with apples, pre-made pie dough and spices. Hence, the mini apple pie was born.

I’m counting this as a fruit serving since I ate this at 10am!

 

Check out the easy assembly…. 

 

After peeling and cutting the apples into small chunks we added our favorite spices…a little cinnamon and nutmeg.

 

We cut the dough to fit in the bottom of the pan and filled with the apple mixture.

And….

 

…covered the top with dough.

After making slits on the top we popped them in the oven for 30-35 min. at 350.

 

So super easy, yummy and a nice way to spend our “not so stormy” day off !

Vintage Tool Boxes

Today we’re sharing another little find that Carin and I picked up over the past few weeks.

Any kind of wood box catches our attention when we’re out shopping, but these vintage tool boxes are the best.

We’ve been known at some sales to clean out rusty old nails, used staples and all other kinds of tetanus inducing materials just to get to the box that is storing them. Most men look at us like we are INSANE–getting rid of good nails for some trashed up wood box? Ridiculous.

The box “before”:

Once we get these vintage storage items home, with just a little cleaning, they become a thing of beauty. Their uses vary. They can hold magazines, art supplies or my personal favorite:

A few vintage linens, dried hydrangeas, antlers and several bottles of wine later we have a fun centerpiece for the upcoming holidays.

I’m just glad Carin and I are up on our tetanus shots because we have been scooping boxes up left and right over the past few weeks.
