Valentine’s Layered Cake

I may not love cake as much as Nicole, but it’s close to the top of my most-loved dessert list.  After finding this recipe a few years ago, I was hooked. I love how it can be tweaked to fit any occasion. I’ve used this recipe for July 4th, repeating red, white & blue layers, my daughter’s birthday with shades of blue and of course for Valentines with layers of red and pink. It takes good ole’ regular cake up a notch!

I must make one little confession…I didn’t make the cake from scratch this time. I know…but when on a time frame, one must use shortcuts. I have to say it turned out great…more boxes may be in my future (if you do go with a box mix, be sure to buy a white cake mix). I also swear by gel food coloring for a deeper color. Nicole, a self proclaimed frosting snob queen kindly shared her favorite frosting recipe. I tweaked it a bit…using both butter and shortening. I’m so glad she shared this recipe because it really is the best buttercream out there and I’ve tried many a recipe that have gotten a big thumbs down from the family.
